The craft of making tofu is slowly disappearing.
In Japan, of the 3000 tofu shops there were ten years ago, there are only 300 left! This is sad news for tofu master Koki Sato, so this young, hip dude from Los Angeles has opened a small factory where he makes tofu every day. Food website Eater has made a fingerlickin’ mini-docu about it.
