Tofu burgers

Lunch or dinner / serves two / 15 minutes 

Ingredients

1 block of tofu, 250 g – 2 Tbsp. oil – 1 tsp onion powder – 1 tsp garlic powder – ½ tsp smoked paprika – ½ tsp salt – ½ tsp pepper – 1 small courgette, sliced very thinly using a mandolin slicer or cheese slicer  - hamburger buns – sriracha sauce – mayonnaise

Preparation:

1. Cut the tofu lengthwise into 1 cm slices. Cut out circles of tofu. Place these circles between two tea towels and put something heavy on top for 10 minutes.

2. Mix the spices with the oil and brush over the tofu. Leave to marinate for at least 15 minutes, or preferably overnight in the fridge.

3. Light the barbecue or put a grill pan on a high heat. Mix one tablespoon of oil with salt and pepper to taste and brush over the slices of courgette.

4. Grill the tofu until grill stripes can be seen. Grill the courgette very briefly.

5. Spread the buns with sriracha and mayonnaise, place the grilled tofu on them and lay the courgette on top. Serve the hamburgers on a large platter.
